Root Beer

Remember to read the notes and hints in Quick Basic Vanilla

1 pint half-and-half
1 pint heavy whipping cream
1/2 gallon whole milk
2 tablespoons of McCormick Root Beer concentrate (†)
2 cups sugar
15 to 20 lbs ice
2 cups rock salt

NOTE! For a great flavor twist, substitute 3 cups of marshmallow cream for the 2 c of sugar

  1. Place half-and-half and heavy whipping cream in freezer can.
  2. Add Root Beer concentrate and sugar and stir until dissolved
  3. Add whole milk until the level reaches the fill line (*)
  4. Add paddle, top with lid and place in mixer
  5. Alternate ice and rock salt until area around can is filled to the top
  6. Plug in mixer
  7. Check every 15 minutes to add more ice and salt as the ice melts (**)

† Want a slightly different Root Beer taste? Substitute two cups of crushed candy Root Beer Barrels for the sugar and Root Beer concentrate and disolve in the half-and-half and heavy whipping cream as it warms in a sauce pan (DO NO BOIL!).
